Position Title: Fabrication Supervisor

Company: FM Meat Products

Reports to: Director of Operations Food Safety & QA

FLSA: Exempt

Objective

To fabricate carcasses by customer, grade, and customer specifications, while ensuring food safety regulations and human safety regulations are by providing oversite and supervision in the quartering and boning room.

Responsibilities

  • Ensure a good clean, healthy product for customers by following GMP's, USDA, HACCP, and internal policies and procedures.
  • Follow customer cut sheets to make sure product specs, piece count and packaging are met.
  • Maximize efficiencies for each program.
  • Track, meet and exceed product yields daily.
  • Manage employee's work schedules, timecards, and PTOs to meet week ending payroll.
  • Manage the raw materials inventory and order if needed. Boxes, Bags, Dry Ice, Combo Liners Etc....
  • Work with Customer Service to make sure all orders have been filled.
  • Assist with the creation of the weekly production schedule.
  • Daily verification that all the equipment and parts have been cleaned properly and working properly.
  • Supervisor will verify with QA that the floor has been released and production may proceed for the day.
  • Ensure the lock out procedure is followed for the circular saw, band saw before putting on the blades and verify that employees are also following this very important safety rule.
  • Check to make sure all cut sheets are updated and correct with Customer Service before production starts.
  • Ensure the quartering team is aware of the order of each program and the number of animals in each program.
  • Follow up with QA and USDA on any animals that might be retained and see if the animal is released for production.
  • Will Fabricate to the best of the team's ability to ensure we reach our efficiency goal, food safety goal and our yield goals.
  • Make sure all employees are present and have the proper safety equipment for area.
  • Verify that all machines are locked out properly when machines are being put together or blades are being changed out.
  • Making sure all knives, air needles have been cleaned and or sharpened for the next day's production.
  • Make sure all employees, including new hires are signed off on the JTA before starting a new position.
  • Report any injuries immediately.
  • Walk and talk with each employee during production about safety and work performance.
  • Work with USDA on any issues they are seeing and addressing these issues immediately.
  • Make sure all products are boxed properly and labeled properly and then palletized into Merit Trax.
  • Ensures a clean environment by ensuring product has been removed from the area.
  • Verify with Ops Manager or accounting that the correct number of animals went across the cold scale and that the weights are correct.
  • Ensure all employees are trained, cross trained and wear the appropriate PPE at all times.
  • Make sure all accident investigation forms are completed.
  • Other duties as assigned.

Qualifications

  • Must be 18 years of age
  • HS Diploma or equivalent
  • Minimum of 2 years in a lead position in a meat packing facility
  • Minimum of 2 year experience in a supervisory role in a meat packing plant
  • Minimum of 1 year experience knife skills
  • The ability to understand, explain, and achieve yields
  • Spanish/English preferred; Not required
